Breakfast

Apple Smoothie

SERVINGS: 1

  • ½ cup skim or soy milk
  • 6 oz (80-calorie) vanilla yogurt
  • 1 tbsp. apple pie spice
  • 1 apple peeled and chopped
  • 2 tbsp. cashew butter
  • Handful of ice

COMBINE ingredients in a blender. Blend for 1 minute, transfer to a glass, and eat with a spoon

Snack at 11:

  • 3 Ounces Carrot Sticks
    • 1/4 Cup Salsa

Lunch

  • Baked cod fillet
  • Salad
  • Tomato
  • Spinach
  • ½ tbsp olive oil

Evening snacks:

Handful of mixed nuts (almonds, brazil nuts, walnuts).

Dinner

  • Lentil salad with pine nuts and spinach: in a pan, simmer 150g lentils with 1 finely chopped small onion, 1 crushed garlic clove, 1 bay leaf, 1 tsp cumin and 400ml water, until the water is absorbed (25-30 minutes). Serve with 1 tsp pine nuts on a handful of organic baby spinach leaves, with a little garlic herb dressing.
